The spine of the drink. Choose a rye with visible pepper and a dry finish — anything soft gets swallowed by the sherry.
A 10 oz double old-fashioned with a heavy base. One 2-inch clear cube, tempered under running water for ten seconds before the build.
Chill the glass to 4°C. A warm glass costs you four minutes of the drink's life.
The Build — Four Movements

Three drops of saline and two dashes of bitters into the empty mixing glass. Roll once so the walls carry the aromatics before any spirit arrives.
Step 02
Demerara first, then amontillado, then vermouth, then rye. Heaviest sugar at the bottom means the stir does less work and dilutes less.
Step 03
Cracked ice to the shoulder. Twenty-two seconds, bar spoon flat against the wall — you want clarity and roughly 21% dilution, no foam, no chips.
Step 04
Julep strain over the single cube. Express the orange coin at 10cm, rim, drop. Spear the cherry last so it sits proud of the surface.
